Foraging With Wild Foods in The Winter

One hopes that this could never happen but you could, as a survivalist, find yourself completed devoid of any food in the winter.  Here are some suggestions of what you could forage in the wild so that you do not starve.

 

 

One food that survives the cold and the snow is the oyster mushroom. They are best in the summer but you can find the fruits growing on a log or a tree stump.  Sometimes, if the weather warms, you can actually find fresher mushrooms that are fruiting. Make sure you have a guide on hand so that you do not accidentally pick a mushroom that is poisonous.  You can eat these cooked anyway and also use them to make a stock for soup. If there is a dehydrator in your shelter you can also dry them and eat them as a snack.

 

 

Another type of edible mushroom is known as Blewits.  It is also sometimes called the Blue or Bluebutton mushroom.  Field Blewits (Lepista saeve) are often found in parks, gardens and on grassland and they are still abundant from October through until January. They are toffee colored mushrooms that have a floral smell.  You can find them beneath snow and frost and they keep well.  They cook well as a soup in powder milk.

 

 

Nettles are also easy to identify. They are nutritious even if they are all gray and dried up. Sometimes, in the winter, you can find new nettle leaves growing at the base of the plant.  When picking these be sure to wear gloves as many of them still have prickles. You can use nettles as a soup stock or make a very nutritious tea out of them.

 

 

Chickweed is another option.  This is a small plant with a white flower that is usually found at the edge of fields and vegetable patches. They like to grow where there I disturbed grounds.  Chickweed is very tasty and tastes like a cross between spinach and watercress.

 

Yet another standby that is still good in the winter is the humble dandelion.  You will not find the flowers blooming throughout the winter months but you will find the leaves in the Spring. During the winter you can pull up the roots and then grind them up to make a primitive yet nutritious coffee.  Dandelion roots are very good roasted.  You can also fry them in oil and soy sauce to make a delicious dish.

Dehydrator Vegetable Recipes

Just eating dried vegetables plain can get a bit boring. There are some more glamorous ways of drying vegetables so you can enjoy them as a real treat.

 

 

A quite glamorous paste for chips to make is Chivy Cheese Chips.  Cottage cheese is blended in a food processor with a ripe tomato, an onion, and cayenne and garlic powder. The mixture is then placed in a dehydrator and sliced into sections.

 

 

Nacho Kale chips are very easy to make and are very high in B-12 and minerals. Blend together cashews, lemon juice, brewer’s yeast, salt, cumin, chili powder and garlic powder.  The Kale leaves are torn into pieces and then dehydrated to make chips.

 

 

You can also make your own version of  Sour Cream & Onion potato chips  by slicing potatoes and coating them in chopped onion, yogurt and salt.  Dehydrate and then eat like you would regualar chips.  You can also use sour cream or even buttermilk but the Yogurt is slightly healthier for you.

 

 

Tomato, Basil and Flax crackers re also very nourishing. This is one cup sunflower seeds mixed with 1.2 up sun-dried tomato, flax seeds, basil, moist fresh tomato, celery, dates, jalapeno peppers, olive oil and salt. The ingredients are blended together

 

 

One recipe that is indispenable for survivalist is the simple one for Cream of Tomato Soup mix in a Jar.   Dry tomatoes in a dehydrator and then grind them into a powder in a blender. Add powdered mil a bit of suet and salt and ground cinnamon. To make the soup in a shelter you only need to add boiling water and bit of butter or margarine to make a very tasty soup.

 

 

You can also make a delicious powdered mix for potato soup in the same way. You dehydrate the potatoes and then pulse all of that together with dried tomato’s, carrots, green beans, bell peers, mushrooms, onion basil, oregano, garlic, mustard, celery powder, parmesan cheese and instant milk powder.

 

 

Another option is to make dehydratd root and ham soup.  You can dry any type of root vegetable such as parsnips, turnips and carrots and then combined with dried green beans, onions, brussels sprouts, carrots, bell peppers, celerity powder garlic, Worcestershire sauce and celery seeds.

 

 

Flavorful food can make a real difference while you are in a survivalist situation so it is nice to stock up on different varieties of food to keep things interesting.  It is simply good for morale.
